Corn Meal Pancakes with Blackberry Syrup

I wanted to make something with blackberries.  Something sweet, but different than your average blackberry cobbler  (coming up next!!).  I like to load my pancakes up with syrup, and then dig in, which left me with a red face, and sticky fingers.  It was worth it though!  Every bite of it.  Come and make some with me!  We'll have blackberry breath in no time!


In a bowl, plop in 1 1/2 scant cups (cup?) flour, 1 1/2 (overflowing, over the top?  Ugh.  Can't think of the word....) yellow corn meal and 1/2 tsp. Salt.


3 TBS. baking powder.  deez are super fluffy pancakes, mon......


and 4 Tbs. sugar.  Mix to combined.

Measure 2 1/4 cups milk,


and to that add 2 eggs,


and 1 Tbs. vanilla.


Mix to combined.


Pour into the flour/corn meal mixture.

Mix gently to combined.

Place a half a stick of butter in a bowl,


microwave it and pour it in the batter.

Using an 1/4 cup measuring thingy,   pour batter onto a hot skillet.

Cook until they look like this,


And then, flip!  Cook a bit' more until done.




For the blackberry syrup (Please make this before hand, as it takes 30-40 minutes):
To a sauce pan heated on low, dump in 1 pint blackberries, 1 cup sugar, and 1/2 cup water.


Heat until boiling, let cook 5 minutes, then add 2 Tbs. corn starch.  Cook longer, until thick.  Smashing down the blackberries as you go.

Pour into a bowl.


Stack a plate of pancakes as high as you want.


Spoon the warm blackberry syrup over the top.
