Peanut Butter Banana Bread


  Peanut butter. Sigh. Peanut butter+Banana=Double sigh.  Peanut butter+Banana bread=COMPLETE SATISFACTION.   Don't you love peanut butter and banana together?  Let alone with it baked in a loaf, and covered in a sweet, sticky glaze with also another hint of peanut butter.  I just "happened"  to hear my chocolate chips call me from the cabinet,  and without hesitation, I grabbed them, and threw them in the batter.  Yes, I added chocolate to a breakfast bread.  Yes, I ate a piece.  Why so many questions?


First, dump in 3 smashed bananas, 1/3 cup plain yogurt......


1/3 cup creamy peanut butter.....


3 tablespoons melted butter.....


and 2 eggs.  Mix to combined.


Now add 1/2 cup packed brown sugar.....


And 1/2 cup granulated sugar.  Mix to combined.


Now dump in 1 1/2 cups flour.....


3/4 teaspoon soda.....


1/2 teaspoon salt.....


1/2 teaspoon cinnamon.....


and 1/8 teaspoon salt.  We'er talking tiny!


Mix to combined.  Don't beat the heck out of it, SLOWLY mix it together.


Now grab a couple of tablespoons of dry-roasted peanuts.....


Roughly chop them up.....


throw them into the batter and mix them in.


Pour the batter into a well greased loaf pan.  If you get any batter on you,  (which "seems" to always happen to me!)  Lick it off.  No questions, just do it.


Bake  for 1 hour and 5 minutes at 350, or until wooden toothpick comes out clean.

For the glaze:

Mix together 1/3 cup powdered sugar, 1 tablespoon milk, and 1 tablespoon peanut butter.  Pour over warm bread.


Spread some peanut butter over the bread, it will make you smile!  (By the way that blue at the bottom is my shirt.....  OOPS!)
