Strawberry Pie!




First let's make the Pie crust:
 Throw in 3 cups flour to a large bowl,


 with 1 teaspoon salt.  Now cut in 1 1/2 cup shortening.  I didn't take pictures of this step because I'm a dork.


Whisk 1 egg (I used the package for the shortening), 


And pour it in the flour/shortening/salt mixture.


Add that along with 1/4 cup water, (5 tablespoons)


and 1 tablespoon vinegar.


Mix that until combined.


Place 1/2 the dough into a plastic bag....


And flatten slightly with a rolling pen.  Do the same with the other half, and place both in the freezer.  This makes 2 pie crusts.

For the filling:
To a medium sauce pan, pour in 1 1/2 cups sugar,


4 1/2 to 5 tablespoons corn starch,


1 1/2 cups water (This is 1 cup water mixed with 1/2 cup pureed strawberries.)  and a pinch of salt.  cook that over medium heat until thick.


Add 2 tablespoon gelatin and 2 tablespoons lemon juice.  Mix and cook a bit longer.


Cool the mixture and throw in 1 pint sliced strawberries.


Toss until combined.


Pour the mixture into the baked pie crust (see Pioneer Woman)  And refrigerate for 2 hours or until firm.


This is more like 45 minutes.  I know this is a sloppy picture, but doesn't sloppy look good?
