Whoopie Pies

They're cookies, they're pies, they're yummy, and they're absolutely free!  Well they're not free, but they are yummy! There are TUNS of kinds of Whoopie Pies,  I made the traditional  chocolate Whoopie Pie, with a out-of-this-world peanut-butter filling.  You can buy the book Whoopie Pies, or you can just have this one recipe that me and my family just simply love!




 To a bowl, sift 1 2/3 cups flour, 2/3 cup cocoa, 1 1/2 teaspoons soda, and 1/2 teaspoon salt.


And uh, sift it. 


To an electric mixer, beet 4 tablespoons softened butter and shortening,


 and 1 cup packed dark brown sugar.  Apparently, dark Muscovado sugar tastes better instead of brown sugar, what ever that is.


Cream that together well. 


Beet in 1 egg and 1 teaspoon vanilla. 


Add half of 1 cup milk, and the flour mixture.  Then add the rest of the milk and flour mixture.


 Plop 1 tablespoon of batter on a parchment paper lined baking sheet.  Bake at 375 for 10 minutes.  Cool completely.


 For the peanut butter filling:
Beet 3/4 cup room temperature unsalted butter... 


With 3/4 cup creamy peanut butter. You can use crunchy, but I don't like crunchy peanut butter.


Cream that together really, really, well. 


 add 3/4 cup powdered sugar and 1/2 teaspoon salt.  Whip that on medium speed for four minutes.  This filling is to die for!


 To assemble:
 Flip a pie upside-down...


 Pipe "some" filling on there, and lightly press another pie on top. 



 You just made Whoopie Pies!


Or, now you will.  Go, away with you, you MUST make these.  Your family will love you for the rest of your life.  You wan't your family to love you, don't you?
