Sigh. Blueberry muffins. I've always loved them, but once I found this recipe, I never went back to the old cook book. I didn't have enough blueberries that the recipe calls for, but this recipe calls for ALLOT of blueberries. This is delicious! yum yum and yum!!
First, in a bowl, add 3 cups, minus 2 tablespoons flour.
Then add 1 teaspoon soda, 2 teaspoons baking powder, and a heavy pinch of salt.
Sift it all together.
To a large bowl, add 1 cup sugar.....
....a dash of nutmeg...
....1/2 cup oil,
and 1 egg.
Add a cap full of vanilla,
and 1 cup of plain yogurt (all I had on hand was vanilla). You can splach in a little more yogurt if you want.
Mix it all together.
Then add the flour mixture.
Mix that all together.
And lightly press in remaining berries.
Then sprinkle about 1 tablespoon additional sugar. Bake for 20-25 minutes. Mine took 18.
Yummy!
Serve with a tall glass of milk.
