Lemon blueberry Pancakes

These are nummy pancakes that I just had to share with you guys. You've probably heard of blueberry pancakes, but have you heard of  Lemon Blueberry Pancakes?  These are very fluffy pancakes that are very delectable in every way.  Instead of using All purpose flour, this recipe uses cake flour, which makes it all the more scrumptious.


                                           Lemon Blueberry Pancakes

1 1/2 cups cake flour
1 Tablespoon (additional) cake flour
1/4 teaspoon salt
1 Tablespoon (heaping) baking Powder
3 Tablespoons sugar
1 1/2 cup Evaporated milk (more if needed)
1 whole lemon (more if needed)
1 large egg
1 1/2 teaspoon vanilla
2 Tablespoons butter, melted
Zest from 1 lemon
1 cup heaping
Extra butter
Maple or pancake syrup

Directions
Heat heavy skillet over medium-low heat.
In medium bowl, mix flour, salt, baking powder, and sugar. Set aside.
In a separate bowl mix evaporated milk, juice of one lemon, (more if it isn't very juicy), and lemon zest.  Allow to sit for 5 minutes, then add egg, vanilla, and melted butter. mix to combined.
Pour wet mixture into dry ingredients.  Stir gently to combined. splash more evaporated milk if mixture is overly thick.  Stir in Blueberries.
Melt butter in heated skillet.  Drop batter by 1/4 of a cup measures and fry pancakes on both sides until golden.  Meanwhile, lets look ate some of my pancake-flipping skills:

                       ...... then flip. OK. I lied.  flipping pancakes is a skill I've yet to know.

                                          Evidently, I managed to get one right, but blurred the picture.





                                          Just look at that sad plate of pancakes.  I cringe.



I actually did get a couple perfect, and put it on a plate to show all of you,
  but before I could do anything, my brother ate it.  So I have this sad plate of pancakes
right here, but at least they were VERY yummy!
