Yes, I made these for breakfast. Before you judge me, le' me tel' ya' that these DO NOT have frosting. Yeah sure, a glaze but listen, would you rather have pancakes with SYRUP? Got ya' there didn't I? But anyway, I loved these very much and so did my family. These are PERFECT for a afternoon picnic and a delicious grab-and-go snack.

Preheat oven to 375.
In a small bowl, stir together 1 2/3 cups flour,
1 1/4 teaspoon baking powder,
and 1/4 teaspoon salt.
To an electric mixer, cream 1 stick butter and 2/3 cup sugar.
Add 1 egg plus 1 egg white.
cream together well. Add 1/2 the flour mixture and mix on low speed until almost blended.
Measure 1/2 cup orange juice...
and add only 6 Tablespoons to the bowl. Add the rest of the flour mixture and slowly mix again.
Finally chop 1/2 cup strawberries and mix into the batter. scoop into muffin pans and bake for 20 to 22 minutes.
Let cool completely on wire rack.
For Glaze:
1 cup powdered sugar
2 Tbs. Orange juice
2 tsp. orange zest
- Make glaze: In a small bowl, stir together confectioners' sugar and remaining 2 Tbsp. orange juice until smooth. If glaze is too thick, stir in additional juice, making sure to add only 1 tsp. at a time, until you reach desired consistency. Glaze should be loose enough to spread easily on cupcakes, but not so thin that it drips.
- Remove cupcakes from pan and top evenly with glaze. Let cool completely on rack, about 1 hour. Garnish each cupcake with a strawberry half, if desired
Ugh. Now I'm hungry for one of these but we don't have any more because they were all eaten. ;(.
Oh but at least I can look how beautiful they are!
