Apricot Bars

Before I say anything, I want you to know that these heavenly things are not ONLY for breakfast, they can be for a snack, a dessert, lunch, or if you're out of ideas and want to make something SUPER easy, dinner.

So, I'm just saying, these things are...........  AMAZING. I had allot left over from breakfast so I had them for a snack, then later, dessert.  THESE ARE VERY EASY AND DID NOT DISAPPOINT.  (Another words, these were nummy!)

first, measure 1 1/2 cups flour....

And an equal  amount of oats.

My oats are kinda, OLD, so They are kinda uh, "broken?"

Then throw in 1 teaspoon baking powder,

1/2 teaspoon  salt,

And 1 cup packed brown sugar.   Mix to combine.

After that, throw in 1 3/4 sticks and this is very important: SLIGHTLY SOFT butter.

See this?  It's not supposed to look like this.

After you cut the butter into the mixture, pres half the mixture down into a 8" square pan.

Spread some apricot preserves (I used plum, that's all I could find in the fridge) and lightly pat the rest of the mixture on top.

I didn't take a picture of me putting the preserves on because I'm a ninny.

Bake that at 350 for 30-40 minutes, or until light brown.  Let them cool completely and cut into squares.

I... I could barely wait to cut into these things, they smelled so good as they were baking.

And I WILL sit down, and sink my teeth into this beautiful creation.

Enjoy!

What about French chocolate pancakes? Or chocolate crackle cookies? If you can wait, BOTH ARE COMING SOON!
