Sweet Potato pancakes

I am desperately in love with sweet potatoes, with their creamy, sweet center!  I love sweet potato fries, but my favorite is my moms Sweet Potato Casserole!  But before we get to that recipe, let's look at these sassy, spiced-up, fluffy pancakes, that are oh so good!  When I made them there was not one left not one. Notta.  You'ell love these!  Unless you don't like sweet potatoes, then maybe you will any way!




Poke a medium sweet potato with a fork and put it in the microwave for 5 minutes or until cooked.   


Mash it up in a bowl.

To a bowl, mix together 1 1/2 cups flour... 


...1/2 teaspoon cinnamon... 


 3/4 teaspoon and 2 1/4 teaspoons baking powder.

To the bowl with the sweet potatoes, add 1 cup milk, 


and a teaspoon of bourbon.  Why?  Because I ran out of vanilla. 


then add 2 tablespoons melted, blurry butter to the sweet potato mixture.... 


 and add the sweet potato to the flour mixture.  I blurred the picture.  Why?  Because It's 11:00 at this point and I wan't to go to bed.

 I FLIPPED THE PANCAKES RIGHT!!!


Oh yes, maple syrup please. 


 IMPORTANT: You must eat these pancakes with maple syrup!!  You life depends on it!


 A dab o' butter, and a fork.

Wow yum...... you can pretty much make anything out of a sweet potato...... yum! you should put a recipe on your blog for sweet potato cake or pie!!! :D yum!
